Roast Wild Goose
with Apricot Stuffing
A “slow oven” bird with an excellent dressing
- 1 young wild goose or turkey
- Juice of 1 lemon
- Salt and pepper
- ¼ cup butter
- ¼ cup chopped onion
- 1 cup chopped tart apple
- 1 cup chopped dried apricots
- 3 cups soft bread crumbs
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 4 to 6 slices parboiled bacon
- Melted butter
Sprinkle goose or turkey inside and out with lemon juice, salt and pepper. Melt ¼ cup butter in a large saucepan, add onion and cook until tender. Stir in apples, apricots, bread crumbs, salt and pepper. Spoon stuffing lightly into cavity. Close opening with skewers and string. Cover breast with bacon slices and cheesecloth soaked in butter. Place goose or turkey breast up on rack in roasting pan. Roast at 325ºF for 2-1/2 to 3 hours. Allow 30 minutes per pound. Baste frequently with pan drippings.

Pumpkin Cake in a Jar
The pumpkin cake is baked in a jar, ready to give as a gift or include in a picnic basket.
- ⅔ cup vegetable shortening
- 2⅔ cups sugar
- 4 eggs
- 2 cups pureed fresh or canned pumpkin
- ⅔ cup water
- 3⅓ cups all-purpose flour
- ½ teaspoon baking powder
- 1½ teaspoons salt
- 1 teaspoon ground cloves
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 2 teaspoons baking soda
- 1 cup chopped walnuts
Preheat the oven to 350 degrees Fahrenheit. Grease 8 wide-mouth pint jars. Cream the shortening and the sugar together, adding the sugar slowly. Beat in the eggs, pumpkin, and water. Set aside.
Sift together the flour, baking powder, salt, cloves, allspice, cinnamon, and baking soda. Add the flour mixture to the pumpkin mixture and stir well. Stir in the nuts. Pour the batter into the prepared jars, filling them half full. Place the jars upright on a baking sheet. Bake on the center rack of the oven for 45 minutes. The cake will rise and pull away from the sides of the jar. When the cake is done, remove one jar at a time from the oven.
While still warm, place a circle of waxed paper on top of each cake and place the lid on the jar. Slide the cake out of the jar when ready to serve. Makes 8 cakes.

Hot Cranberry Cider
An aromatic drink that is enticing and delicious.
- 4 cups apple cider
- 4 cups cranberry juice
- 2 1-inch cinnamon sticks
- 2 1-inch strips orange peel
- 1 cardamom pod, crushed
In a stainless steel or enamel saucepan, combine the apple cider and the cranberry juice. Into a small piece of 100 percent cotton cheesecloth, add the cinnamon sticks, orange peel, and cardamom pod. Tie the cloth securely. Drop the spice packet into the liquid and bring the mixture to a boil; simmer for 10 minutes. Remove the pan from heat, remove the spice packet, and serve.
Makes 8 cups.
